I think I'm understanding why I've been getting HTML mail:

Default send method:
Default sending method for getting messages from this system.

Offers: Mail, Mime Mail, and HTML Mail

while later on, this is offered:

Check this option if you do not wish to receive email messages with graphics and styles
[ ] Plaintext email only 

Perhaps the system gets slightly confused due to the
overloading of options?  (I do.)
